Strawberry Salsa

What You’ll Need:

2 c. Organic Strawberries, finely chopped (by hand)

1/2 c. Red Bell Pepper, diced

1/4 c. White Onion, finely chopped

1 Jalapeño Pepper, seeded and finely diced

2 Tbl. Cilantro, chopped

2 Tbl. Cold Pressed Olive Oil

1/2 tsp. Fresh Lime Juice

1 Tbl. Xylitol (or Pineapple Juice)



  1. Chop strawberries by hand (using a processor will turn them to mush. Don’t do that), and place in large bowl.
  2. Add red peppers, onion, jalapeño, garlic, cilantro, olive oil, lime juice and xylitol.
  3. Mix well.
  4. Refrigerate for 1-2 hours
  5. Serve chilled with tortilla chips, or use it as a sauce for a sassy meat dish.
