Refreshing salsa is just in time for summer.
What You’ll Need:
2 c. Organic Strawberries, finely chopped (by hand)
1/2 c. Red Bell Pepper, diced
1/4 c. White Onion, finely chopped
1 Jalapeño Pepper, seeded and finely diced
2 Tbl. Cilantro, chopped
2 Tbl. Cold Pressed Olive Oil
1/2 tsp. Fresh Lime Juice
1 Tbl. Xylitol (or Pineapple Juice)
- Chop strawberries by hand (using a processor will turn them to mush. Don’t do that), and place in large bowl.
- Add red peppers, onion, jalapeño, garlic, cilantro, olive oil, lime juice and xylitol.
- Mix well.
- Refrigerate for 1-2 hours
- Serve chilled with tortilla chips, or use it as a sauce for a sassy meat dish.
