Pizza with a Veggie Crust
What You’ll Need:
The crust:
1 head of cauliflower
1 egg
1 Tbs Italian seasoning
1 tsp garlic
1 tsp red pepper flakes
Toppings:
Whatever you like for a pizza and however much you like of it.
Mediterranean (kalmata olives, feta , green olives, onions, etc.)
The Basic:
½ cup mushrooms
½ cup scallions
½ cup sweet peppers
1 cup of Organic Paesana tomato & basil marinara (my favorite sauce in a jar. No sugar, organic, and divine!)
1 small onion
Shredded cheese (your choice – mozzarella, Italian, etc. – just don’t overdo it)
Prep
Steam the cauliflower (do not soak in water) until it is soft ~ 20 minutes. Put in a bowl and add egg, Italian seasoning, garlic and red pepper flakes (if you like a little heat). Mash it up like mashed potatoes. Spread on a pizza stone or baking dish. Bake crust at 400 degrees about 25-30 minutes until golden brown. (This cooks off a lot of the water.)
Take the crust out of the oven and add your favorite toppings. Hint: Add plenty of marinara sauce if you are using it. Put the “completed” pizza back in the oven at 400 degrees for ~20 minutes. (Crust should now be a little dark on the ends.)
My husband’s favorite meal is pizza and while he resisted it before trying, this is now his favorite!
