Gluten-free Zucchini Patties

What You’ll Need:

2 cups grated zucchini_MG_8972

2 large eggs, slightly beaten

2 Tbs chopped green onion

2 cloves garlic

1/2 cup gluten-free flour

1/4 cup grated Parmesan cheese

1/2 tsp baking powder

1/2 tsp salt

Grape seed oil as needed

 

Prep

Blot grated zucchini with paper towels to remove moisture. Stir zucchini, eggs, garlic, and onion in a large bowl. Mix flour, Parmesan cheese, baking powder, and salt in a separate bowl; stir mixture into zucchini until batter is just moistened.

Heat grape seed oil in a large skillet over medium-high heat. Drop rounded spoonful’s of zucchini batter into hot oil; pan fry until golden.

 

I love these for breakfast or dinner! For breakfast I top them with some unsweetened, organic applesauce and a splash of maple syrup and for dinner, I’ll add additional veggies on top (e.g. tomatoes, avocado, fresh spinach, etc).
